Nestled perfectly between a sand-filled park and the beach where we live is a lovely cafe that goes by the name of Coast. They sell delicious coffee, gorgeous cakes and, something we tried once and have loved since, aubergine fries.
We loved these so much that we asked for the recipe, which goes as follows:-
Recipe
Take one aubergine and slice into strips approximately 1cm thick.
Soak in lemonade for five minutes.
Coat in flour.
Fry in seasoned oil for around two minutes until golden.
Serve with mayo or, ideally, aioli.

We used to have something very similar when we were on holiday in Spain many years ago and they are totally yummy. The soaking in lemonade part though was a surprise!
